Some producers become interesting because of rarity. Others because of story. Friis-Holm Chocolate belongs to a more useful category for chefs: producers whose work changes the way an ingredient is understood.

Founded by Danish chef Mikkel Friis-Holm, Friis-Holm Chocolate is built around cacao as a flavour-bearing agricultural ingredient. Variety, origin, farmer practice, post-harvest work, roasting, refining and tempering all leave a trace. The maker’s task is not to cover those traces, but to bring them into balance.

Consistency without neutrality

For a chef, chocolate quality does not begin with percentage. It begins before the bean reaches the factory. Fermentation, drying, variety, handling and consistency all shape the finished ingredient.

A 70 percent bar is not automatically comparable with another 70 percent bar. The number may be the same; the flavour, structure and behaviour can be completely different.

The maker

Mikkel Friis-Holm is a Danish chef and chocolate maker. His route into cacao ran through San Francisco and Scharffen Berger, and then to Nicaragua, where a cacao project begun in 2007 established the farmer relationships that still sit at the centre of the company’s work.

In Herslev, Denmark, he transforms directly sourced, single-variety cacao into precise, expressive chocolate, preserving the distinctive character of each origin for chefs who take ingredients seriously.

Made in Denmark, from bean to bar

Friis-Holm Chocolate A/S was founded in 2014, and the first Danish-produced chocolate ran through the machines in 2015. Since then, the official story is simple: the chocolate is made in Denmark, from bean to bar.

That phrase can be overused. In Friis-Holm’s case it is useful only if understood as responsibility. Control over production means little unless the maker also understands the cacao.
