Notes Mendiants are a type of traditional French chocolate confection that originated in Provence, a region in southeastern France. The word "mendiant" in French means "beggar," and these chocolates are named after the four mendicant or monastic orders of the Catholic Church: the Dominicans, Franciscans, Augustinians, and Carmelites. The story behind mendiants chocolates dates back several centuries. Monks and nuns would make these treats using leftover ingredients, such as nuts and dried fruits, that were readily available to them. They would create a simple base of melted chocolate, usually dark or milk chocolate, and then decorate it with the various ingredients. The toppings on mendiants chocolates typically include four types of dried fruits and nuts: raisins or sultanas for the Dominicans (representing purity), hazelnuts or filberts for the Augustinians (symbolizing wisdom), dried figs or dried apricots for the Franciscans (representing humility), and almonds for the Carmelites (symbolizing abstinence).

Allow us to introduce Gabriele Maiolani, a master chocolatier known for his exceptional craftsmanship and passion for creating delectable chocolates. With a humble yet profound statement of "faccio cioccolato" (I make chocolate), Gabriele Maiolani has dedicated his life to the art of chocolate-making. Gabriele's journey in the world of chocolate began in 1980, thanks to his mother Odilla, a renowned painter of French ceramics. Collaborating with various master chocolatiers from beyond the Alps who purchased her ceramic displays, Odilla introduced Gabriele to André Sauvadet, a respected chocolatier. Under André's guidance in his workshop near Vichy, in Lapalisse, Gabriele discovered his true calling. In those years, he absorbed knowledge ranging from the ensemblement of ingredients to the significance of sourcing high-quality raw materials and mastering sophisticated techniques. Starting as an apprentice, Gabriele's dedication and passion led him to become an assistant and eventually a Maitre Chocolatier, completing his training in Tain l'Hermitage. With a vision to bring the French chocolate experience back to his native land of Savoy, Gabriele opened his first laboratory in Turin in 2004. André stood by his side for three years, sharing his expertise in the productions leading up to Christmas and Easter. Gabriele still treasures André's recipe book, a source of inspiration for his own creations. Throughout the years, Gabriele had the fortune and passion to experiment with various ingredients. He had the privilege of collaborating with prestigious companies, visionary entrepreneurs, and kind-hearted individuals who shared their stories through chocolate. One notable collaboration was with Cantine Ceretto, where Gabriele's chocolate met the Piedmont Hazelnut IGP in the new Relanghe gianduja recipe. Gabriele's journey in the world of chocolate continues, fueled by his unwavering commitment to creating exceptional chocolates and exploring new possibilities in the realm of flavors and experiences. His talent and dedication have earned him the esteemed title of "Maestro del Gusto" among the chocolatiers of Turin, a recognition he holds dear.
