Since 1928 the Italian Montoso dairy in Piedmont has been producing excellent butter and cheese, distinguished by traditional techniques, handmade processes and elegant wrapping. Founded by Carlo Colomba, the dairy is now a fourth-generation family business which collects milk from its Piedmontese-breed cows. Its cheeses, with the distinctive 'CC' monogram, are produced in small, limited quantities, each numbered and hand marked. Carlo del Clat's highlights include the Tuma dla Pietra which brings an ancient peasant recipe back to life and is served on a sheet of Luserna stone.
